Food Challenge #4- Pasta Carbonara

Welcome back my food loving friends, long time no post. Well lets just say the time off has been nice but I’m ready to get back to cooking, this week I have made the choice to make something by someone who really knows what she’s doing, Ree Drummond form the show The Pioneer Woman. For this challenge I choses to re creat her Pasta Carbonara, one because of the fact that one its a family favorite of mine along with that it is bright and colorful but last it is a fast and easy recipe to make if you have a bunch of small children that you are trying to cook for. Lets face it sometime they are the hardest people to win over in the world. But enough of the small talk lets get into learning how to cook this amazing dish, and Ill tell you that this meal was a total 10 out of 10.

Heres the list of Ingredients that you will all need to make this along wit how to make it

Ingredients

12oz. Pasta, any variety

8 pieces thick bacon ( diced small) I also used the whole package because my family loves Bacon

1/2 whole medium onion, diced small

2 cloves garlic, minced

3 whole eggs

3/4c. Finely grated Parmesan

3/4c. Heavy cream

Salt and Pepper to Taste

  -  As seen in the directions i used other spices I used about a Teaspoon of each one-

1/2c peas

Directions

1. Wash your Hands then Cook pasta according to the package

To the pasta water I always add some salt and oil then place a clean wooden spoon over the pot so the water doesn’t overflow.

2. While pasta is cooking. Fry the bacon just barely to a crisp. remove the bacon from the pan draining most of the grease but not all of it, return the pan to the stove and cook the onion and garlic on medium-low heat tell the onions and garlic is just golden brown.

In between cutting the bacon and the onions, garlic make sure you wash and clean your cutting bored, knife and work space very well

3.In a large bowl, mis the eggs, Parmesan, cream, salt and pepper until smooth

I did just use a spoon due to the fact that they cheese would have gotten stick in a whisk if I had used that. I also added my own favorite seasoning mostly because i like a lot of flavor and this dish tends to be a little bland.

4. When the pasta is done reserve a cup of the pasta water then drain the rest of the pasta water. Place the pasta back in the pan then slowly add the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash the pasta water in to the mixture If it becomes to thick.

5. Halfway through add the bacon, peas, onions and garlics, then finish adding the egg mixture

6. Serve immediately with extra Parmesan

In the end there was many things that I changed just because of the fact that one, I’m gluten-free so I change the pasta to gluten-free, I also added dry own spices as seen in the pictures above last thing that i changed was the peas I didn’t add those because of the fact that my family doesn’t like them. I also took advantage of the wonderful farmers market shop that is nearby my home town by getting the garlic, onions and farm fresh eggs for this recipe. In the end I did add a side salad. Overall the dish went over very well with my family even the little people that I had to please.
